			<content:encoded><![CDATA[<p><strong>Maggi Masala Noodles</strong> have become so popular in India. The masala flavored spice packet which comes along with the Noodles is well suited for Indian taste buds. I had some Shrimp and decided to try <strong>Masala flavored Noodles</strong> which is different from the regular Chinese Noodles made with all the Chinese Sauces. Though I wasn&#8217;t able to recreate the Maggi Masala magic, we loved this spicy masala noodles and relished it.</p>

<p>Here is the recipe for making <strong>Masala flavored Shrimp/Prawn Noodles</strong>. You can add chicken or meat instead of Shrimp.</p>
<p><span style="text-decoration: underline;"><strong>Ingredients</strong></span></p>
<ol>
<li>Chinese Egg Noodles – 1 packet (12 -14 oz)</li>
<li>Lightly Cooked Shrimp (peeled &amp; deveined) – 1/2 lb (You can also use Uncooked Shrimp)</li>
<li>Finely Diced Onions – 1 large</li>
<li>Thinly sliced Carrots – 1 cup</li>
<li>Diagonally Sliced Beans – 1 cup</li>
<li>Diagonally Sliced Snap Peas &#8211; 1 cup</li>
<li>Turmeric Powder &#8211; 1/2 tsp</li>
<li>Chicken Masala Powder &#8211; 1 tbsp ( I have used Eastern brand)</li>
<li>Onion Powder &#8211; 1 tsp</li>
<li>Garlic Powder &#8211; 1 tsp</li>
<li>Eggs – 2</li>
<li>Bean Sprouts – 1/2 cup</li>
<li>Chopped Spring Onions/Green Onions/Scallions – 1 bunch</li>
<li>White/Black Pepper – to taste</li>
<li>Oil – 3 tbsp</li>
<li>Salt – to taste</li>
<li>Lemon Juice &#8211; 1 tbsp</li>
</ol>
<p><span style="text-decoration: underline;"><strong>For the Sauce</strong></span></p>
<ol>
<li>Dark Soy Sauce – 4 tbsp</li>
<li>Tomato Ketchup – 2 tbsp</li>
<li>Red/Green Chilly Sauce – 1 tbsp</li>
<li>Brown Sugar – 1 to 2 tsp</li>
</ol>
<p><span style="text-decoration: underline;"><strong>For marinating the Shrimp</strong></span></p>
<ol>
<li>Soy sauce – 2 to 4 tbsp</li>
<li>Ginger garlic Paste – 1 tbsp</li>
<li>Chilly Garlic Sauce &#8211; 1 tbsp</li>
<li>Cornstarch – 1 tbsp</li>
</ol>
<p><span style="text-decoration: underline;"><strong>Preparation Method</strong></span></p>
<ol>
<li>Wash and clean the shrimp. Soak it in water along with 1 tbsp lemon juice for 5 minutes. Drain and marinate  with the above ingredients and refrigerate it for atleast 30 minutes.</li>
<li>Boil the Egg noodles according to the instructions on the packet. Drain and rinse the noodles with cold water. Keep aside.</li>
<li>Beat the eggs with little salt and pepper and keep aside.</li>
<li>Heat 1 tbsp of oil in a wok and throw in the marinated shrimp. Stir fry on high heat for 5 minutes.  Remove the shrimp and keep aside.</li>
<li>Heat 2 more tbsp of oil in the same wok and saute onions until translucent.</li>
<li>Add carrots, beans and snap peas to the wok. Stir fry on medium-high  heat  for around 5-7 minutes till it almost  cooked but crispy. Season  with salt and pepper.</li>
<li>Reduce heat and add chicken masala powder, turmeric powder, onion powder and garlic powder. Stir fry for a minute.</li>
<li>Push the veggies to the sides of the wok and add the beaten eggs. Allow the eggs to set and then scramble thoroughly.</li>
<li>Throw in the previously stir fried shrimp to the wok.</li>
<li>Mix all the ingredients for the sauce and pour it into the wok. Saute for 2 minutes.</li>
<li>Add the noodles, bean sprouts and spring onions. Toss everythign   well for 3-4 minutes on medium high heat until the sauces have been   absorbed by the noodles.</li>
</ol>
<p><span style="text-decoration: underline;"><strong>Note</strong></span></p>
<ul>
<li>If you are using Uncooked Shrimp, you will have to stir fry it until it turns pink.</li>
<li>Fell free to incorporate vegetables of your choice like bell peppers, celery, cabbage and so on.</li>

			<content:encoded><![CDATA[<p style="text-align: left;">I am back with another <strong>Waffle </strong>recipe. When you bake waffles with <strong>nuts </strong>and <strong>dried fruits</strong>, it tastes so yummy. Each bite is  satisfying with the crunchiness of nuts and sweetness of fruits. I had  dried fruits and pecans with me. So, I decided to try <strong>Pecan Dried  Fruits Waffle</strong> for breakfast.</p>

<p>Feel free to experiment with any dried fruits of your choice like apricots, pineapples, raisins, berries, apples and so on. I added <strong>whole what flour</strong> for extra fiber. I used <strong>vegetable oil</strong> instead of butter to reduce the calories. You can make two <strong>8&#8243; round waffles</strong> with the given measurements.</p>

<p><strong><span style="text-decoration: underline;">Ingredients</span></strong></p>
<ol>
<li>Whole Wheat Flour – 1/3 cup</li>
<li>All Purpose Flour – 2/3 cup</li>
<li>Baking Powder – 2 tsp</li>
<li>Sugar – 1 tbsp</li>
<li>Salt – a pinch</li>
<li>Egg – 1</li>
<li>Milk – 2/3 cup</li>
<li>Vanilla Flavoring – 1 tsp</li>
<li>Vegetable Oil – 2 tbsp</li>
<li>Dried Fruits &#8211; 1/4 cup (I used raisins, cranberries, cherries and blue berries)</li>
<li>Finely Chopped Roasted Pecans &#8211; 2 tbsp</li>
</ol>
<p><span style="text-decoration: underline;"><strong>Preparation Method</strong></span></p>
<ol>
<li>Beat the egg in a bowl until thick. Add milk, vanilla flavoring and vegetable  oil to the bowl and beat everything thoroughly.</li>
<li>In a separate bowl, combine wheat flour, all purpose flour, sugar,  salt and baking  powder.</li>
<li>Sift the powders into the beaten egg &amp; milk mixture. Mix well so that no lumps  are formed. Do not over  mix the batter.</li>
<li>Fold dried fruits into the batter.</li>
<li>Preheat your waffle maker and sprinkle 1 tbsp of chopped pecans.</li>
<li>Pour required quantity of batter and bake the waffles according to the instructions of your Waffle  Maker.</li>
<li>You can have these yummy waffles without any syrup but you may go  ahead and top it up with Maple Syrup, Chocolate Syrup and so on.</li>
</ol>

To my surprise, I found out that <strong>Soft &amp; Fluffy Scrambled Eggs</strong> are made by adding milk, cream, cheese and so on. The eggs have to be cooked on low heat for a longer time. Well, most of us scramble our eggs quickly on medium-high heat. <p>The simplest <strong>Creamy Scrambled Eggs</strong> can be made with just one  extra ingredient which is always there in our fridge &#8211; <strong>Milk</strong>. I know  &#8220;Milk&#8221; may sound strange but believe me, when milk is combined with  eggs, the result is<strong> eggstraordinary</strong>. You will love these scrambled eggs and will definitely want to make it daily for breakfast.</p>
<p>If you are in a hurry, you can always cook your eggs on a<strong> higher heat</strong>. It won&#8217;t take more than a minute or 2 to scramble your eggs on a higher heat, but they won&#8217;t be creamy like the ones in the first picture. The below picture shows eggs which were <strong>quickly scrambled</strong> on medium-high heat. They were good but not as tasty as the Soft &amp; Creamy scrambled eggs in the first picture.</p>

<ol>
<li>Eggs &#8211; 2</li>
<li>Milk &#8211; 3 tbsp</li>
<li>Salt &#8211; to taste</li>
<li>Pepper &#8211; to taste</li>
<li>Cooking Spray</li>
</ol>
<p><span style="text-decoration: underline;"><strong>Preparation Method</strong></span></p>
<ol>
<li>Beat the eggs and milk in a bowl until well combined.</li>
<li>Heat a non stick pan on medium-low heat and coat it lightly with cooking spray.</li>
<li>Pour the egg mixture into the pan and allow it to set for 30 seconds.</li>
<li>Start stirring the eggs continuously, so that it doesn&#8217;t stick to the pan and become dry.</li>
<li>Make sure that the temperature is on medium-low or else the eggs will dry out.</li>
<li>Keep on stirring and remove the eggs from the pan when they are almost set but still creamy and little runny. It will take atleast 5 minutes.</li>
<li>Season with salt and pepper to taste. You can serve this as a sandwich any time of the day.</li>

<p>Isn&#8217;t this how new recipes evolve? <strong>&#8220;Experimenting with recipes&#8221;</strong> is not for everyone and I would say &#8211; the few who choose to do that are really courageous. I have fallen in love with these <strong>Wheat Appams</strong>. Aren&#8217;t these an easy way to incorporate Wheat into your diet, specially for people like me who don&#8217;t have the patience to Roll out Chappatis and Rotis <img src='http://recipes.malayali.me/wp-includes/images/smilies/icon_smile.gif' alt=':-)' class='wp-smiley' /> </p>
<p>Well, I have decided to make these Wheat Velayappams atleast once a week for Breakfast and Dinner. Thanks to the <strong>Cookery Show</strong> and <strong>Leksmi Nair</strong>. Hats off to you lady!!! I am yet to try making this Appam using a <strong>Palappam Chatti</strong>. I am not sure if it will come nicely like <a href="http://recipes.malayali.me/?p=907"><strong>Rice Palappams</strong></a> but will be experimenting soon.</p>
<p><span style="text-decoration: underline;"><strong>Ingredients</strong></span></p>
<ol>
<li>Wheat Flour (Atta) &#8211; 2 cups</li>
<li>Yeast &#8211; 1 tsp</li>
<li>Sugar &#8211; 1 tbsp + 2 tbsp</li>
<li>Salt &#8211; to taste</li>
<li>Egg &#8211; 1</li>
<li>Coconut Milk &#8211; 1/2 cup</li>
<li>Luke Warm Water &#8211; 1.5 to 2 cups approx</li>
</ol>
<p><span style="text-decoration: underline;"><strong>Preparation Method</strong></span></p>
<ol>
<li>Combine Wheat Flour, yeast, 1 tbsp sugar and salt in a mixing bowl.</li>
<li>Pour luke warm water little by little and start mixing the ingredients to form a <strong>thick batter</strong>. You can use your hands or a hand mixer as the batter should be free of lumps. The batter should be thick as it will rise after fermentation.</li>
<li>Keep the batter overnight (or atleast 8 hours) for fermentation.</li>
<li>Add coconut milk, 2 tbsp of sugar and salt (if needed) to the batter.</li>
<li>Beat the egg and add it to the batter. Mix everything once again.</li>
<li>Heat a non stick Tava or Griddle. Pour a big ladle full of batter onto the Tava and spread it only a little bit like the way you do for Kallappams. Do not spread the batter too much like the way you do for Dosas. Allow it to cook until holes have formed entirely on the top side. This may take 3-4 minutes.</li>
<li>Flip the Velayappam and cook the other side for a minute.</li>
<li>Serve these Vellayappams with any spicy curry of your choice.</li>

			<content:encoded><![CDATA[<p>After all the Holiday Eating, here&#8217;s a super simple salad made using <strong>Moong Bean/Green Gram </strong><strong>Sprouts </strong><strong>(Cherupayaru Mulapichathu) </strong>. I have been longing to write about all the health benefits of <strong>Sprouted Mung beans</strong> but, I guess,  it is well known to almost all Indians. <strong>Sprouts are free of cholesterol and are a good source of fiber and protein. It is easily digested and is free of gas.</strong> These sprouts can be eaten <strong>raw </strong>or<strong> lightly boiled</strong>. It is ideal for anyone on a diet. Sprouted Mung Beans can be refrigerated for 3-4 days.</p>

<p>I make these mung sprouts at home. There are lot of videos available on Youtube which demonstrate how to sprout different kind of beans.</p>
<p>This is how I <strong>sprout Moong Beans</strong> at home:-</p>
<ol>
<li>Wash and drain the moong beans. Soak the moong beans for atleast  8 hours. I leave it overnight.</li>
<li>Rinse the soaked Moong beans 2-3 times. Drain the water and transfer the beans to a <strong>sprout jar</strong>. You can use any glass jar with a thin cloth secured to its rim.</li>
<li>Repeat the 2nd step for 2-3 days until you get the desire sprouts.</li>

<p>Now I days, I have started using these Green Gram sprouts for making <strong><a href="http://recipes.malayali.me/?p=2617">CheruPayaru Mezhkkupuratti</a></strong>, <a href="http://recipes.malayali.me/?p=875"><strong>CheruPayru Curry</strong></a> etc. and it definitely tastes much better and is gentle on the stomach.</p>
<p><span style="text-decoration: underline;"><strong>Ingredients</strong></span></p>
<ol>
<li>Sprouted Mung (Moong) Beans &#8211; 1 cup (Raw or lightly boiled)</li>
<li>Hard Boiled Egg &#8211; 1</li>
<li>Grape Tomatoes &#8211; 5 or 6</li>
<li>Salt &#8211; to taste</li>
<li>Pepper &#8211; to taste</li>
</ol>
<p><span style="text-decoration: underline;"><strong>Preparation Method</strong></span></p>
<ol>
<li>Lightly boil the sprouts for around 5 minutes to soften it a bit. (optional)</li>
<li>Combine all the ingredients to make a healthy salad. You can also use any salad dressing of your choice but I like mine with salt and pepper.</li>
</ol>
