			<content:encoded><![CDATA[<p><strong>Broccoli </strong>is such a <strong>healthy vegetable</strong> but it is rarely used in Indian Cuisine. It is really expensive in India compared to other vegetables. Here is a recipe for a nourishing <strong>Cream of Broccoli Soup</strong>. This soup tastes wonderful and will lift your spirits on a dull day.</p>

<p><span style="text-decoration: underline;"><strong>Ingredients</strong></span></p>
<ol>
<li>Fresh Broccoli Florets &amp; Stem (Chopped) &#8211; 4 Cups approx</li>
<li>Chopped Onions &#8211; 1 small</li>
<li>Chopped Garlic &#8211; 2 cloves</li>
<li>Slit Green Chilly &#8211; 1 (optional)</li>
<li>Vegetable Broth &#8211; 1 cup</li>
<li>Water &#8211; 1/2 to 1 cup</li>
<li>Milk &#8211; 1 cup (Alternatively, you can use Whipping Cream)</li>
<li>Butter &#8211; 2 tbsp</li>
<li>Salt &#8211; to taste</li>
<li>Black Pepper &#8211; 1/2 tsp</li>
</ol>
<p><span style="text-decoration: underline;"><strong>Preparation Method</strong></span></p>
<ol>
<li>Melt 1 tbsp butter in a pan and saute onions until translucent.</li>
<li>Add the garlic and slit green chilly and saute for a minute.</li>
<li>Throw in the chopped broccoli and stir fry for 2 minutes.</li>
<li>Add 1/2 cup of water and 1 cup vegetable broth to the pan. Cover and cook for around 10 minutes until the broccoli is tender.</li>
<li>Remove from heat and allow it to cool. Blend everything in a blender or food processor until smooth.</li>
<li>Transfer it back to the pan and reheat.</li>
<li>Slowly, add milk or cream and simmer for a few more minutes. Do not boil.</li>
<li>Season with salt and pepper. Garnish with slivered almonds.</li>
</ol>
<p><span style="text-decoration: underline;"><strong>Note</strong></span></p>
<ul>
<li>If you want to thicken the soup, stir in 1-2 tbsp plain flour after Step 3. Saute until the flour turns light brown.</li>

I had a can of <strong>Cream Style Golden Corn</strong> and went ahead and made a <strong>Chicken &amp; Corn Soup</strong>. <ol>
<li>Chicken Breast &#8211; 1</li>
<li>Finely Diced Onions &#8211; 1 medium</li>
<li>Cream Style Golden Corn &#8211; 1 can (14 oz approx)</li>
<li>Black Pepper Powder &#8211; 1/2 tsp</li>
<li>Garlic Powder &#8211; 1/2 tsp</li>
<li>Soy Sauce &#8211; 1 to 2 tsp</li>
<li>Vinegar &#8211; 1 to 2 tsp</li>
<li>Sugar &#8211; 1 tsp (optional)</li>
<li>Salt &#8211; to taste</li>
<li>Corn Starch/Flour &#8211; 1 tbsp (optional)</li>
<li>Water &#8211; as needed</li>
</ol>
<p><span style="text-decoration: underline;"><strong>Preparation Method</strong></span></p>
<ol>
<li>Wash the chicken breast and cut it into very small pieces.</li>
<li>Apply salt, garlic powder and black pepper on the chicken pieces.</li>
<li>Pressure cook the chicken and onions in 3 to 4 cups of water for around 10 minutes. This will make the chicken tender.</li>
<li>Allow the pressure to subside. Open the pan and add cream style golden corn. Simmer for 5 minutes.</li>
<li>Add Soy Sauce, Vinegar &amp; Sugar (optional). Simmer for a few more minutes. Do a taste test and adjust the seasonings.</li>
<li>If you want to thicken your soup, dissolve a tablespoon of Corn Starch in half cup of water and stir it slowly into the soup. I usually avoid this step.</li>
<li>Enjoy your steaming Chicken &amp; Corn Soup.</li>

Whenever I go to any restaurant, I order <strong>Sweet Corn chicken Soup </strong>and it&#8217;s my all time favorite. I had some leftover <strong>Crushed Tomatoes and Whipping Cream </strong>after making <strong>Chicken Tikka Masala</strong> and decided to try a simple Tomato Soup. Surprisingly, it came out well and I enjoyed the soup probably because it was home made . <li>Crushed Tomatoes &#8211; 1 cup (Please use Skinless and Seedless Crushed Tomatoes)</li>
<li>Water &#8211; 1 cup</li>
<li>Onion Powder &#8211; 2 tsp</li>
<li>Garlic Powder &#8211; 1 tsp</li>
<li>Red Chilly Powder &#8211; 1 tsp</li>
<li>Black Pepper powder &#8211; to taste</li>
<li>Butter &#8211; 1 tbsp</li>
<li>Salt &#8211; to taste</li>
<li>Whipping Cream &#8211; 1/4 cup</li>
</ol>
<p><span style="text-decoration: underline;"><strong>Preparation Method</strong></span></p>
<ol>
<li>Melt butter in a saucepan and add the crushed tomatoes.</li>
<li>Pour water to the saucepan and stir carefully.</li>
<li>Add onion powder, garlic powder, red chilly powder, salt and pepper.</li>
<li>Stir carefully and bring the soup to a slow boil.</li>
<li>Reduce heat and add whipping cream.</li>
<li>Stir gently and remove from stove top after a minute.</li>
<li>Toast 2 slices of bread until firm. Dice the bread into cubes.</li>
<li>Serve the hot soup with toasted bread crumbs.</li>
</ol>

<ul>
<li>I have used Canned Crushed Tomatoes in this recipe which are readily available at most of the Grocery Stores in US.</li>

<li>Add the diced carrots and saute for around 5 minutes.</li>

<li>Season with salt and pepper. Add soy sauce if needed.</li>
<li>Cook until the noodles are tender.</li>
<li>Serve hot with Ketchup or Chilly Sauce.</li>

This is an excellent soup when you are on a <strong>diet </strong>and want to avoid a few calories. You can also serve this as an <strong>Appetizer</strong>. This soup can be prepared ahead of time and refrigerated. Whenever you feel sick with a flu, try this simple <strong>Homemade Vegetable Soup</strong> garnished with lots of Pepper. I have used <strong>Milk </strong>in this recipe instead of Cream to increase the thickness of the soup.</p>

<li>Finely Chopped Celery &#8211; 1/4 cup</li>
<li>Olive Oil &#8211; 2 tbsp</li>
<li>Salt &#8211; to taste</li>
<li>Pepper Powder &#8211; 1 tsp</li>
<li>Any Red Chilly Sauce &#8211; 1 tbsp (optional)</li>
<li>Milk &#8211; 1 cup</li>
</ol>
<p><span style="text-decoration: underline;"><strong>Preparation Method</strong></span></p>
<ol>
<li>Heat olive oil in a deep non stick pan and saute onions until translucent.</li>
<li>Add carrots, celery, green peas to the pan and continue sauteing for around 5-6 minutes.</li>
<li>Add the chopped tomatoes to the pan. Sprinkle salt and pepper.</li>
<li>Cover and cook the veggies for another 4-5 minutes or until tender.</li>
<li>Add 6 cups of water to the pan and bring it to a slow boil.</li>
<li>You can add 1 tbsp of any red chilly sauce to the soup for a nice spicy flavor.</li>
<li>Reduce heat and simmer the soup for 20 minutes.</li>
<li>Meanwhile, heat 1 cup of milk in the microwave.</li>
<li>Remove the soup from heat and add milk stirring continuously.</li>
<li>Garnish with butter before serving.</li>
</ol>
