Here is a long overdue post. Palappam (Rice Crepe) is a common Breakfast food in Kerala which is served with Vegetable or Meat Curries. I have been getting many requests for the traditional Palappam recipe made by soaking and grinding Rice. I used to make Palappams with Rice Flour but after having laid my hands on a lovely Preethi Mixie, I started grinding rice for Palappams. The recipe for Palappam varies from region to region or probably household to household.

Some use Grated Coconut, while other use Coconut Milk. Some use Whole Dairy Milk instead of Coconut Milk. Some use Yeast for fermentation while others use Coconut Water or Toddy.

Palappam is often served for Christian Weddings. It goes well with Fish Molee, Vegetable Stew, Egg Roast, Kerala Chicken Curry and so on.

Kerala Palappam

I make Appams for parties and whenever we have guests. Though it is time consuming, the end result is well worth the effort.

Ingredients

Raw Rice – 2 cups (Use any short or long grain rice)

Cooked Rice – 3/4 cup approx

Yeast – 1.5 to 2 tsp

Sugar – 1 tbsp + 3-4 tbsp or as needed

Salt – to taste

Thick Coconut Milk – 1/2 cup

Ice cubes – as needed

Water – as needed

Preparation Method

Soak the rice for atleast 6 hours or leave it overnight.

Wash and drain the rice and keep aside.

Dissolve the yeast and 1 tbsp sugar in 1/2 cup of lightly warm water. Keep it aside for ten minutes until it foams.

Next, you need to grind the rice in several batches. Grind around two handfuls of raw rice along with a few tablespoons of cooked rice and very little water. I add 2-3 ice cubes while grinding each batch to prevent the mixie from overheating. Grind until you get a smooth batter.

Transfer the batter to large bowl. Continue doing this with the remaining rice.

While grinding the last batch, add the yeast solution to the mixie.

Leave the batter in a warm place for 6-8 hours. I usually leave it overnight. Enusre that the bowl is large enough to prevent the batter from overflowing after fermentation.

The batter would have risen after fermentation and will look foamy. Stir the batter and check the consistency. Add 1/4 – 1/2 cup of coconut milk to make a batter of medium consistency. If the batter appears thin after fermentation, skip the coconut milk.

Add sugar as per desired sweetness (3-4 tbsp) and salt to taste. Mix everything together.

At this stage, you can start preparing the Appams with this batter or for extra lacy appams, leave the batter untouched for half an hour. The batter will froth and rise again. Spoon the foamy layer from the batter and transfer it to another dish. Use this foamy batter for making Appams.

Heat a Palappam Chatti and lightly grease it with oil.

Once the Palappam Chatti is hot, pour a ladle full of batter and swirl the pan in one direction so that the batter spreads to the edges.

Keep it covered and allow the Appam to cook for a few minutes.

Once cooked the edges of the appam will start separating from the pan. Remove the appam carefully with a spatula.

Note

You may need to adjust the amount of cooked rice used in this recipe. If you use too much of boiled rice, the appams will become sticky. If the rice used is less, appams won’t be soft. Try using 1/2 to 3/4 cup of cooked rice but not more than that.

While grinding the rice, try adding very little water. The unfermented batter should be thick as it will rise and thin out after fermentation.

To make appams with brown laces, increase the amount of sugar.

Ingredients

Skinless & Boneless Chicken Thighs – 1 kg/2.2 lbs

Diced Onions – 1 large

Finely Minced Ginger – 1 tbsp

Finely Minced Garlic – 2 cloves

Curry Leaves – A large sprig

Hot & Sweet Chilly Sauce – 2 tbsp (Alternatively, you can use 2 tbsp Red Chilly Sauce and 2 tsp sugar)

Red Chilly Powder – 1/2 tsp (Alter according to your Spice Tolerance)

Black Pepper Powder – 1/2 tsp

Garam Masala Powder – 1/2 tsp

Chilly Garlic Sauce – 1 tbsp (Optional)

Salt – to taste

Water – as needed

Lemon Juice – 1 tbsp + 1 tsp

For the Marinade

Corn Flour – 2 tbsp

Chicken Masala Powder – 1 tbsp (I used Eastern Chicken Masala Powder)

Red Chilly Powder – 1 tsp (Alter according to your Spice Tolerance)

Turmeric Powder – 1/4 tsp

Black Pepper Powder – 1/2 tsp

Ginger Garlic Paste – 1 tbsp

Salt – to taste

Preparation Method

Trim all visible fat from the boneless & skinless chicken thighs. Cut it into small bite sized pieces. Wash the chicken thoroughly and soak it in water along with 1 tbsp lemon juice for around 5 minutes. Drain and keep aside.

Prepare a marinade using the above ingredients and apply it on the chicken pieces. Refrigerate it for atleast 2 hours or leave it overnight.

In a deep pan, heat oil for deep frying. Gently add the chicken pieces to the pan and fry for around 5-6 minutes. Drain onto a paper towel. You can do this in several batches.

Heat 2 tbsp oil in another non stick pan and add onions. Saute until translucent.

Throw in the curry leaves, minced ginger & garlic. Saute for a few more minutes.

Reduce heat and add red chilly powder, black pepper powder, chilly garlic sauce, hot & sweet chilly sauce. Add a few tablespoons of water to make a little gravy.

Add the fried chicken pieces and mix everything gently. Sprinkle 1/2 tsp garam masala powder.

Remove from stove top and keep covered. If you prefer, sprinkle 1 tsp lemon juice just before serving.

Note

I have used Chicken Thighs instead of Chicken Breasts as thighs tend to retain their softness after deep frying.

You can use any Hot & Sweet Chilly Sauce but if you prefer a tangy taste, you can use Maggi Hot & Sweet Tomato Chilly Sauce or add 1-2 tbsp ketchup along with the Chilly Sauce.

I have made Kerala Style Fish Cutlets for many occasions but somehow never got to post the recipe. These fish cutlets make an excellent appetizer along with Kerala Onion Salad (Sarlas). I have tried both Canned Fish as well as Fresh Fish Fillets for making these cutlets. Here is the recipe for yummy fried fish cutlets.

Kerala Style Fish Cutlets

Ingredients

Canned Tuna Fish – 2 cans ( I used Chunk Light tuna in water)

Potato – 2 medium

Very Finely Diced Onions – 1 big

Finely chopped Green Chillies – 2 or 3 (Alter according to your spice tolerance)

Finely Minced Ginger – 2 tbsp

Finley Minced Garlic – 3 to 4 cloves

Curry Leaves (finely shredded) – A few

Turmeric Powder – 1/4 tsp

Red Chilly Powder – 1 tsp (Alter according to your spice tolerance)

Coriander Powder – 1 tsp

Garam Masala Powder – 1/2 tsp

Fennel Seeds Powder – 1/4 tsp (optional)

Black Pepper Powder – 1/2 tsp

Fish Masala Powder – 1 tbsp (Optional – I used store bought Eastern Fish Masala brand)

Oil – 2 tbsp

Salt – to taste

Egg – 1

Bread Crumbs – 1/2 cup approx

Cooking Oil for frying – As needed

Preparation Method

Boil the potato along with salt until well cooked. Allow it to cool and then remove the skin. Mash it thoroughly until there are no chunks (Alternatively, you can pressure cook the potato until cooked).

Heat 2 tbsp oil in a pan and saute onions until translucent.

Add green chillies, ginger, garlic and curry leaves and saute for a few more minutes.

Add red chilly powder, turmeric powder, coriander powder, fish masala powder (optional), pepper powder, fennel seeds powder (optional) and garam masala powder. Saute for 2 minutes.

Drain the water or oil from the tuna and add it to the pan along with salt to taste. If using fish fillets instead of canned fish, see the note section.

Mix everything well and saute the tuna for around 10 minutes. Allow it to cool.

In a large bowl, combine the cooked fish and mashed potatoes using your hands. Do a taste test and add more salt if needed.

Make lemon sized balls using your palm and flatten the balls to form cutlets of any desired shape. Place it on a plate or tray.

Beat the egg in a bowl and keep aside. Take bread crumbs in a plate and keep aside.

Take one cutlet at a time and dip it in the beaten egg and then roll it in the bread crumbs until the cutlet is fully coated with bread crumbs.

Once all cutlets have been coated with bread crumbs, heat a non stick frying pan and add oil as required for deep frying or shallow frying.

Place the cutlets slowly in the pan and fry each side on medium heat for 2-3 minutes until golden brown. Drain onto paper towels.

Serve these tasty fish cutlets with ketchup, onion salad, mint chutney or any dip.

Note

You can use Fish Fillets instead of Canned Fish. I have made these fish cutlets with Tilapia Fillets and it tasted good.

If using skinless & boneless fillets, wash it thoroughly and cut it into medium sized pieces. Follow the same procedure. While cooking the fish, stir frequently with a spatula so that the fish breaks down into small pieces. You need to saute the fillets for around 15 minutes.

Alternatively, you can microwave the fillets for 4-5 minutes until tender. Shred the fillets using a fork and then saute it with the other ingredients in the same manner. This will reduce the cooking time.

If using Fish with bones like King Fish, boil the fish with salt and turmeric until done. Remove the bones and shred the fish. Saute it with the remaining ingredients.

You are hungry and want to have a quick snack. Your kids will be home after school and you want to make a quick snack (which isn’t boring) for them. You are entertaining guests at home and you need to make some quick bites. Whatever the scenario, here are a few easy Quick Bites for you to enjoy.

Peanut & Jam Bread Bites

You just need 3 ingredients to make these beautiful crunchy rounds – bread, jam & peanuts. You can use White Bread, Wheat Bread, Multi-grain or anything you prefer. These yummy bread rounds taste more like a jam roll and you will love it for its simplicity.

Peanut & Jam Bread Bites

Ingredients

Bread Slices – 4 (I used Whole Wheat Bread)

Jam – 3 to 4 tsp (I used Plum Jam)

Crushed Roasted Peanuts – 8 to 10

Preparation Method

Cut out discs from each bread using a glass & knife or a cookie cutter.

Spread jam on one side of each disc and sprinkle the crushed peanuts.

Arrange on a plate and serve these sweet bread rounds.

Casual Cracker Canapes

Your daily canapes don’t have to be fancy like the ones served at formal dinner parties. Grab a few ready-made Toppings and a few crackers of your choice and you are ready to assemble your canapes. I like salsa and relish on my crackers. You can try mayonnaise, cheese, bacon, ham, tuna, shrimp, fruit and so on. Kids will definitely love these colorful canapes.
